Mrs. Burns lemon basil grows 18–36 in (46–91 cm) tall and 12–24 in (30–61 cm) wide. It has bright green leaves about 3 in (8 cm) long and white flowers that are tinged with pink. The leaves are very slightly serrated, and the inflorescence is in the form of a thyrse. It has the strongest lemon scent and flavor of all the lemon basils, and also has undertones of cinnamon and mint and hints of spice along with a strong floral note. The strong lemon scent and taste is due to a high content of citral, while the floral fragrance comes from linalool.

Tomato Basil Chicken
PREP: 15 MINUTES COOK: 30 MINUTES

Ingredients:
2 Chicken Breats, Skinless
2 Tsp Italian Seasonings
3 Tbsp Lemon Juice
2 Tsp Olive Oil
Salt, To Taste
1 Sprig of Basil Leaves, Finely Chopped

Tomato Basil Sauce
2 Tbsp Olive Oil
3 Cups Tomato Puree
¼ Cup Basil Leaves, Roughly Torn
1 Onion, Finely Chopped
10 Garlic Cloves, Finely Chopped
1 Tbsp Italian Herbs
1 Tsp Chili Powder
Salt, To Taste
Sugar, To Taste
 

Directions:
1. Mix Italian herbs, lemon juice, olive oil, and salt in a large bowl. Add chicken, coat thoroughly.  

2. Heat skillet to medium-high heat. Put the chicken breasts in skillet and cook for two minutes on both sides until the chicken turns a light brown color. Remove chicken to a plate. 

3. Add olive oil to skillet, add garlic and onions. Sauté about five minutes until the onions soften. 

4. Add torn basil leaves, tomato puree, Italian herbs, red chili powder, salt, and sugar. Bring the sauce to a boil, turn it down to a simmer. 

5. Place the chicken breasts on top of the sauce. Cover the skillet, simmer for 10 minutes. Remove from heat. Serve topped with basil.
